Hi, my name is Christa, and I hate pancakes. There. I said it. Whew. I think it all stems from a traumatic five year stint as a waitress at IHOP…any significant amount of time spent around batter will change a person, you know? As part of my twelve-step program to recovery, I decided to give these ‘cakes a try. I had some friends over for brunch today and since I’m on a frittata kick for my brunch menus lately , I thought I would mix it up and offer some carbs to people as well. Turns out, unbeknownst to me, that one of my guests is also not a fan of the flapjack, and yet we both gave the benefit of the doubt and may have made a small but important step towards changing our attitudes about these innocent breakfast staples. I’m mean look, c’mon, it’s hard to say no to a plate like this:
As I mentioned earlier, I do love most anything with oatmeal in it. I’ll even consider eating pie with an oatmeal crust which is a big deal (yes I hate pie too and I know I’ve now lost all validity as a food-lover). Here the oatmeal makes the pancakes have a lot more substance and texture to them. Regular pancakes often seem kind of empty to me, so I think I appreciate the hearty taste of these. They are denser and take longer to cook than a buttermilk batter, so allow extra time to prepare. The strawberries make this breakfast sweet, but not cloying, so if you find yourself opting strictly for the egg choices on the menu like I do give these a try, I think they might have appeal. I know I’ll be keeping this recipe to whip up for another brunch soon.
Oatmeal Raisin Pancakes
serves 5
2T. brown sugar
2T. vanilla
1 1/2c. oats (instant or rolled)
1/2c. raisins (I used golden)
2 eggs
2c. plain yogurt
3/4c. wheat flour
1/2t. baking soda
1/2t. baking powder
1 1/2t. Saigon cinnamon
1/2t. nutmeg
1/2t. salt
2c. sliced strawberries (optional, you can use any fruit or spread of your choice)
maple syrup
In a medium bowl, whisk together the first six ingredients; the mixture should be fairly soupy. Set aside. In a separate larger bowl add the remaining six dry ingredients and stir together to mix. Add in the wet ingredients and fold in until just blended. Heat griddle or large skillet on medium heat and grease pan with butter or cooking spray. Ladle about 1/4 to 1/3c. of batter onto the griddle for each pancake so that they are spread out about four inches in diameter and one inch apart on the skillet. Cook for about 3-4 minutes before flipping or until golden brown and mostly cooked through on one side. Flip and finish cooking. Serve immediately with strawberries and maple syrup.
Damn, you have been productive these last few weeks! I love the idea of pancakes but kind of hate them in real life, but I will give these a try.
I just made these pancakes and they were a big hit at our house (well, Tom is still sleeping but Nate and Zach and I all LOVED them). Those babies could not get enough. *I* could not get enough. And I didn’t get enough, because the boys kept snarfing away, but I digress. I made your delicious caramelized carrot salad the other night and used the left over dried cherries in the pancakes instead of raisins and I think I will use dried cherries from now on!
I know, I too was a non-believer but I think there’s been a weird chemical shift in me this past week. I went out to breakfast on Sunday and ordered a waffle for crying out loud! I’m telling you, these pancakes change your life.

Oh I just read a little further. Does this mean you also do not eat pickles? (ie. max)
Certainly not! I detest pickles, they have ruined many a tuna salad or sandwich plate for me. Max surely did not help to ease the distaste! As for the pancakes, the only ones I would eat were the kind with Cream of Wheat in the batter, but I quickly OD’d on those too. Too much of a good thing.
